About the Recipe
This is so good, reheats well, and great for a beginner chef. It comes together so fast -- great weeknight dinner. Don't let the mayonnaise fool you - it's fantastic.

Ingredients
1 pound ground beef or turkey
12 ounces salsa
1 cup drained sweet corn (white or yellow)
¾ cup mayonnaise
1 tablespoon chili powder
2 cups crushed tortilla chips (I smash a whole unopened bag into tiny pieces)
2 cups shredded Colby Monterey cheese or cheddar cheese, or combo
Optional toppings: chopped lettuce, tomato, and black olives
Preparation
Preheat oven to 350°.
Brown and drain meat (beef or turkey). Break it up as it's browning.
Stir in salsa, drained corn, mayo, and chili powder.
Layer ½ each of meat mixture, then crushed chips, then cheese in a casserole dish. Repeat meat, chips, cheese layer.
Bake for 20 minutes or until heated.
Top with chopped lettuce, tomato and black olives - all optional.
