About the Recipe
Making pesto involves fresh basil, a blender or food processor, garlic and oil. Traditionally, pine nuts are used, but this recipe uses walnuts. I like the taste (and the price!) better. Throw this on pasta with roasted veggies and cheese and/or protein, and it's a meal. I like it with roasted veggies, feta cheese, and kalamata olives.

Ingredients
⅓ cup walnuts
3 cloves garlic (whole, peeled)
1 cup fresh basil leaves
3 tablespoons avocado oil
2 tablespoons olive oil
½ teaspoon kosher or sea salt
2-3 tablespoons warm water
Preparation
Add to a food processor or blender all the ingredients.
Process until thick, but smooth.
Taste and adjust olive oil and/or water and/or salt. If adding any of these three items, add in small amounts and "pulse" the processor or blender (that means only power up a few seconds at a time, until well blended).
Add to cooked pasta and/or veggies when satisfied with the taste.
You can store this in the fridge for 3-4 days; or freeze for up to 3 months.
