About the Recipe

This recipe is great to make on the weekends so you have a healthy breakfast available all week. I like steel cut oats the best, but they are best in the instant pot so it can cook at length and get nice and soft. When you have a batch like this, you can just scoop out enough for breakfast, add some fruit and a little milk, and microwave to heat up.

Juicy Chicken Breast

Ingredients

  • 1 tablespoon butter

  • 1 cup steel cut oats

  • 3 ½ cups of water

  • 1 large (peeled, cored, diced) apple

  • 2 tablespoons light brown sugard

  • 1 ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • fresh fruit & milk to serve (optional)

Preparation

  1. Add butter to instant pot & sauté.

  2. When butter is melted, add oats and toast, stirring constantly, until they start to darken & smell nutty. This will take about 3 minutes.

  3. Add the rest of the ingredients. Select high pressure and set the cook time to 10 minutes.

  4. When the cook time ends, allow the pressure to release naturally for at least 10 minutes. (We've let it sit for an hour or so, and it still works great.) Then finish with a quick pressure release.

  5. When the valve drops, carefully remove the lid - the steam is really hot, so keep your hands and face out of the way. Stir the oats. Cover, and let sit another 10 minutes or so until the oats are at the desired thickness.

  6. Let cool and then store in the refrigerator for up to 5 days. Reheat portions, as needed, in the microwave. One bowl can take 2-3 minutes heated.

  7. Top with your choice of milk, fruit, nuts, brown sugar, etc, when preparing a bowl. You can add this either before heating or after.

Note: This is one of the only meals Dad knows how to make, so it must be easy (LOL). Dad & I double this so we can share all week. We get 8-10 bowls of oatmeal out of a double batch.
